We’ve been eating at Agabi for years and have tasted almost every dish on the menu. Each member of my family has discovered a favourite dish, that we always seem to consistently order.

My father loves the Creamy Chicken, muddled with mushrooms and onions. My mother is a fan of the Lamb Shashlik, grilled to perfection with green pepper and mushroom. My sister always orders the Chicken Pineapple, marinated boneless chicken served with crispy bacon and juicy pineapple. It’s easy to make homemade chicken shawarma in your own kitchen by using a hot oven or barbecue, so don’t worry if you’ve never bought a rotisserie as they aren’t absolutely necessary.

Shawarma is defined by its crispy texture thanks to its slow roasting and marination in Middle Eastern spices such as cumin, cardamom, cinnamon, turmeric and paprika.

You can mimic the flavour and texture of chicken shawarma roasted on a rotisserie grill by baking thin slices of chicken in a hot oven with our traditional mix of Middle Eastern spices.

Make sure to only use chicken thigh meat, as it has a higher fat content, helping transform the final product into the crispy texture you’re looking for. You can use chicken breast meat but the texture will be off and the meat will dry out when baking in the oven.

If you’re making this recipe during the warmer months of the year and have a barbecue at home we suggest grilling the chicken thighs to enjoy a smoky flavour and charred exterior. Grill the marinated chicken thighs on a flaming barbecue and slice them on your cutting board once they’ve rested for 5 minutes at room temperature. This helps retain the juices.

Homemade Toum Shawarma Garlic Sauce

Ingredients

Roast Chicken Shawarma

  • 1 tbsp Ground Cumin
  • 1 tbsp Ground Coriander
  • 1 tbsp Turmeric Powder
  • 1 tbsp Garlic Powder
  • 1 tbsp Smoked Paprika
  • 1 tsp Cayenne Pepper
  • 1/2 tsp Ground cloves
  • 2 lbs Boneless Skinless Chicken Thighs
  • 1 Large Cooking Onion sliced
  • 1 Lemon juice and zest
  • 1/3 cup Olive Oil

Shawarma Plate

  • 2 cups Hummus
  • 2 cups Baba Ghanoush
  • 2 cups Greek Salad
  • 1/2 cup Kalamata Olives
  • 6 Pita
  • 1 cup Fresh mint chopped

Instructions

Roast Chicken Shawarma

  • In a large mixing bowl combine the cumin, turmeric, coriander, garlic powder, cayenne pepper, paprika and cloves. Set aside the shawarma spice mix as you'll need it later.

  • Pat the chicken thighs dry and season generously with salt on both sides. Thinly slice chicken meat into small bite-sized strips.

  • Dump the chicken strips into the mixing bowl and toss in shawarma spices until the raw meat is fully coated.

  • Add the onions, lemon juice, lemon zest and olive oil. Toss again until the mixture is evenly coated. Cover and refrigerate for 3 hours or overnight to allow the chicken to marinate.

  • Before you're ready to eat, preheat the oven in your kitchen to 425 degrees. Take the chicken out of the fridge and let it sit at room temperature as the oven heats up.

  • Spread the marinated chicken with the onions in one layer on a large oiled baking sheet. Roast for 30 minutes, tossing the chicken shawarma after they've been in the oven for 15 minutes.

  • For a more browned, crispier chicken, move the pan to the top rack and broil very briefly for 1-2 minutes.

  • Remove roasted chicken from the oven and get ready to prepare a healthy shawarma plate or platter for a large group.
